Meatless Nachos + Homemade Vegan Chickpea Queso


It's Taco Tuesday! Since I'm still doing the vegan #meatlesschallenge...I wanted to add a little twist to the typical meatless meals I've been eating. So...Today I came up with Loaded Vegan Nachos!

Y'all...This was a super quick recipe that took 30 minutes and less. I used the Gardein Beefless Ground as my meat substitute and seasoned to taste. Of course, I used some taco seasonings to add to that seasoning as well as some sauteed onions, diced tomatoes, and fresh avocados.


Also, I topped my loaded vegan nachos with my homemade vegan chickpea queso and it was so delicious!

Ingredients for Homemade Vegan Chickpea Queso
  • 1 can of BUSH’S® Garbanzo Chickpeas
  • 1/3 cup of Original Almond Milk
  • 1/4 cup of Braggs Nutritional Yeats 
  • 3 tbsp of turmeric
  • 4 tbsp of minced garlic
  • A dash of Cayenne Pepper
Instructions

  • Blend together for a cheese-like consistency 

After plating the tortilla chips, I simply added the Gardein Beefless Ground, my toppings, and drizzled the vegan chickpea queso on top with a dash of chives! Yall...this was the easiest dinner ever and the kids didn't even know that the meal was entirely #meatless better yet vegan!
